Vegetable Biryani

A fragrant and flavorful rice dish packed with vegetables and aromatic spices.

Ingredients

  • 2 cups Basmati rice, washed and soaked for 30 minutes
  • 2 cups mixed vegetables (carrots, peas, beans, potatoes)
  • 1 large onion, thinly sliced
  • 1 tomato, chopped
  • 1/2 cup plain yogurt
  • 2 tbsp Biriyani Masala
  • 1 tsp ginger-garlic paste
  • 4 cups water
  • 2 tbsp ghee or oil
  • Salt to taste

Instructions

  1. Heat ghee/oil in a large pot. Fry the sliced onions until golden brown. Set half aside for garnish.
  2. In the same pot, add ginger-garlic paste and sauté for a minute.
  3. Add chopped tomatoes and cook until soft.
  4. Add the mixed vegetables, yogurt, Biriyani Masala, and salt. Cook for 5-7 minutes.
  5. Drain the soaked rice and add it to the pot. Stir gently.
  6. Pour in 4 cups of water and bring to a boil.
  7. Reduce the heat, cover the pot, and simmer until the rice and vegetables are cooked (about 15-20 minutes).
  8. Garnish with fried onions and serve hot with raita.
